Having discovered that our Half Term was full of appointments I wanted to make the twins
something special for their birthday, but something I could make in advance.
So, I duly purchased a silicone cake pop mould and thought it would be easy. It wasn't! The sticks wouldn't hold even with melted chocolate to seal them in, the cake was too crumbly..... and I ended up making the usual birthday cakes at 11pm the night before.
I also decided I was never going to attempt cake pops again, until last week when I came across Emily Leary's
Cake Pop recipe.
(I highly recommend her site, the "Recipe of the Week" is a regular link up with lots of new ideas, several of which I have adapted to make a "free from" version for ourselves.)
Anyway, inspired once again I decided it was worth a second try.

Free From Cake PopsGluten free, dairy free, soya free, wheat free, could be egg freeYou will have to read the recipe/details on Emily's site, they are easy to follow and with better photos than I can muster with my trusty iPhone. Here are the changes I made to make them "free from".
1) Either make some chocolate cake to crumble, or cheat. It's been a hectic week so I actually grabbed a couple of boxes of free from chocolate brownies, which happened to be half price in Waitrose as it was near their sell by date.
2) The Betty Crocker Chocolate Fudge frosting is fine for us, check the ingredients but I was (very) pleasantly surprised.
So this was the first part completed.
NB I either recommend you buy double quantity or make these without the children. They WILL eat half the mixture..... (whereas as I only ate a small amount of course. *ahem* )
In the fridge they went whilst I tried to source some "melts" Emily used Renshaw's but I couldn't find any, so decided to melt some safe chocolate.
NB The cake pops MUST be fridge temperature for this to set quickly. Lay out some tinfoil ready to let them set on, and let excess chocolate dribble off before dipping in the toppings.
The dip in your chosen topping. My two love strawberries which both tolerate, so I bought some freeze dried strawberries as a treat.
